Fruit Mixture:

  • 1 pound fresh cherries, pitted and halved
  • 1/4 cup Amaretto liqueur
  • 1 tablespoon sugar

Tiramisu Layers:

  • 16 ladyfingers
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed espresso, cooled
  • Cocoa powder, for dusting
  • Shaved dark chocolate (optional)

Instructions

  1. Fruit Mixture: In a small bowl, combine cherries, Amaretto, and sugar. Let the mixture sit for 30 minutes, stirring occasionally.
  2. Tiramisu Filling: In a large bowl, whisk together mascarpone cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the mascarpone mixture.
  3. Assembly: Dip each ladyfinger in espresso and arrange a layer at the bottom of a dish. Spread half of the mascarpone mixture over the ladyfingers. Add half of the cherries on top. Repeat layering with remaining ingredients.
  4. Finish: Dust the top with cocoa powder and shaved dark chocolate if desired. Refrigerate for at least 4 hours before serving.

Notes

  • For a stronger amaretto flavor, brush the ladyfingers with additional liqueur.
  • Adjust the sweetness by adding more or less sugar to the cherry mixture.
  • Top with fresh mint leaves for a pop of color and freshness.
